There are a few perks to hiring a caterer. First, it can prevent a lot of stress and work. Not only do caterers save you the trouble of preparing the food yourself, but they have a lot of experience, ensuring your event will go smoothly. They will also typically customize your menu to incorporate any dietary needs you stipulate (nut-free, vegetarian, etc.). Second, caterers are often connected to a variety of complimentary services: florists, decorators, photographers, and so on. My caterer was a part of the reception center, which also offered a host of these other services. Working with one organization (or several connected organizations) can make your event a little easier to plan.
As for finding a good caterer, do your homework. Check references and credentials. Be sure they are certified by the Board of Health and have liability insurance. Don't hire them online without visiting their place of business first. You'll want to sample the food they offer and verify their menu is something you like. Their entrées may sound delicious, but you shouldn't just take their word for it. Remember too that the bigger and more costly catering services aren't necessarily the superior ones. Sometimes the larger establishments will utilize canned or packaged foods, while smaller businesses will usually make their food from scratch.
Once you find a caterer you like, hire them well ahead of time--the further ahead, the more options you'll have with availability. Meet with them several times before the date of the event, and make sure you know their policy about serving unanticipated guests. Many caterers will have extra food prepared in case, but you may have to pay for it, even if it's not used.
