When Canning Salsa Recipes, Make Sure You Follow These Health Tips

When canning salsa recipes you need to take extra care -it can definitely pose a health risk if not done properly. The bacteria which may result from improperly canned food produces a deadly toxin that can cause severe damage to the central nervous system (and in the worst case death) when consumed in even small amounts.

Since most salsa recipes contain a mixture of low-acid foods such as onions and chiles, an acid such as lemon juice or vinegar must be added to prevent the growth of this bacteria. Special care must be taken to ensure that they contain enough of this acid to be processed safely in a boiling water canner.

When following canned salsa recipe instructions, make sure to follow them exactly. Use the amounts of each vegetable listed in the recipe and add the amount of vinegar or lemon juice listed.

Do not can salsas that do not follow these or other research tested recipes. Remember that you always have the option of freezing or refrigerating the salsa.

Do not thicken salsas with flour or cornstarch before canning. After you open a jar to use, you may pour off some of the liquid or thicken with cornstarch.

Make sure you follow manufacturer's directions for pretreating the jar lids. When canning your salsa, fill the hot clean jars with the hot salsa. Be very careful not to leave any of the salsa on the rims. Wipe the rims of the jars with a clean, damp paper towel. Put on lids and screw on metal bands.

When processing in a boiling water canner, use a rack to keep jars from touching the canner bottom and to allow the heat to reach all sides of the filled jars. Put the jars into a canner that contains simmering water.

Add the boiling water if needed to bring water 1-2 inches above the top of the jars. Don't pour the water directly on the jars. Place a tight-fitting cover on canner.

Bring water back to a rolling boil and set a timer for recommended processing time. Make sure the water is boiling gently and steadily.

Remove the jars from the canner immediately after timer sounds. If the jars are left in the water too long the food could spoil.

If you find that a jar is not sealed, refrigerate it and use it soon after that.

When storing, wipe the jars and label them with the date and the contents of the jar. Store the salsa jars in a cool dark place and use it within a year.

When you are ready to try your homemade salsa recipe, before opening each jar, look for any bulging lids, leaks, or any unusual appearance of the food. If you notice an odor, mold, foam, or anything that might make you suspicious, destroy the salsa food.

As you can see, you need to take great care when canning salsa to ensure that the quality of the food is maintained. But the results are worth the effort!

Police Oral Board Secret Weapon

It is a good idea to practice your oral board answers, but what tools can you use to do that -- and what tools give you an edge?

A video camera is a great tool. You need to see how you look to other people. What better way is there to get a good look at yourself? How about standing in front of a mirror? Both of these tools help you check out how you appear to others, but both miss the most important aspect of your oral board answers -- what you say and how you sound when you say it.

Only one tool can give you what you need when you practice: a hand-held tape recorder.

Think about it. The Oral Board, you talking, and the officers on the board listening. That spotless police badge you want to wear hinges on you picking up a tape recorder and hearing what is going to come out of your mouth in that unbelievably important situation.

I was contacted by a coaching candidate recently. He had made it to some oral boards and one Chief's Oral, but had not been successful. Now, an invitation to the LAPD oral board had been offered, so he wanted to set up a private coaching session.

After a few moments of talking with him, I was aware of something critical that was probably missing in his previous preparations. I asked him if he used a tape recorder to practice. He hemmed and hawed and finally, like 99% of the candidates I interview, said, "Well, no. But, I am thinking about it."

I told him to use a tape recorder to hear how he sounded. After trying this, he got the message -- his answers were garbage.

Applicants want a badge so bad they will do nearly anything ethically and morally to get it, except to use the most effective preparation tool around.

For some reason, they do not get how valuable using a tape recorder is for practicing your answers. You can get your timing, inflection, and volume down pat, see where to cut material and how many uhs and duhs fill the pauses -- and last, but not least, to see if you sound like Donald Duck.

To be successful at the police oral boards, you need to get married to your hand-held tape recorder. You need to hear what the oral board members are going to hear. That little tape recorder will narrow the distance between you and the badge you want so badly.

The first thing a candidate says when he hears his voice on a tape recorder is always, That's not me! Well, yessir, it is you. And if you want it to sound different, glue that hand held tape recorder to your palm and practice, practice, practice.

Guys prepare for the Police Oral Boards by thinking about their answers and then writing them down. For some reason, they think that because they wrote them down, their answers will magically come rolling out of their mouths in the oral board. But, trust me, they will not! Your brain and mouth just don't work that way.

If you want to prepare by writing something down, try this:

Practice your answers with the tape recorder.

Play back your recorded answers. If you hear something you don't like, write it down on the back of the 3x5 card with that question.

Let me tell you how critical this is. If you are not using a tape recorder to practice, practice, practice -- rehearse, rehearse, rehearse -- learning your material until it becomes second nature to you, you may as well not show up for your oral board.

If you do not spend serious time burning your presentation and your answers into your brain, you are wasting the oral board's time and your time! Stop the madness and seek out another career. One problem though, you have to interview for other jobs too.

The candidate above has already lost some great opportunities. Had he faithfully used a tape recorder to prepare for his oral boards, he might have already begun his police career.

Some candidates think that if they practice too much their answers will sound canned. But, NO, it won't! Practice will make sure your answers are planned, complete, and as perfect as possible.

Practice makes permanent.

Luck is preparation meeting opportunity. One practice session with a tape recorder is worth speaking something out loud 10 times. Practice gets you to a point where your answers sink into your subconscious, and that is where the magic begins. Practice won't let you be fooled.

I believe practicing with a tape recorder is so important that I will not coach a candidate if they are not using one. It is a waste of my time and their money.

Believe me, your competition knows the value of using a tape recorder and they will fly past you, if you're not using one too.

After 22 years of police experience, here's what I know -- to properly prepare to audition for the position of police officer, you must use a tape recorder.

Practice, practice, practice and you will have the power to catapult yourself into the Olympic Camp of law enforcement. You will have a great shot at the badge -- and the chance to be one of the true American heroes.

Telephone Interview Techniques - Your Voice May or May Not Get You That Job

It is a well known and stated fact that first impressions are everything. Once a first impression is made it's almost impossible to shake off. The same can be said of your telephone voice during phone interviews and phone interview screening sessions. How you present yourself during that initial portion of the phone interview, and throughout the remainder of it may well determine if you get or offered that job, promotion or career upgrade.

You should use the telephone in a persuasive sense. After all it's only a communication tool. You are what you are and you are not what you are not. Telephone communication skills can be developed as with any other skill - be it an employment related or general skill set. To make persuasive job search telephone skills requires preparation and practice.

First and foremost your voice is your personality over the telephone- it makes an immediate impression that will portray you as friendly, confident, distant or timid, relaxed or nervous. What can you do to improve your first impressions over the line?

First of all the first step is remarkably easy. Smile when you speak on the phone. The muscles used to smile actually relax the vocal cords and create a pleasant tone of voice. Next do not talk on the phone with gum or food in your mouth. Did your mother ever tell you "Don't talk with your mouth full"? Sure you might think that by going into battle so to speak by the seat of your pants and throwing yourself to the wolves getting practice in the process that this is a poor use of your time and limited contacts. If your contacts are that important take the time to practice your presentation ahead of time. It is well worth the time and energy in successful results, less burned bridges, less frustration and more effective results on your part. Again practice makes more perfect.

On the other hand do not use a canned phone call or "script". Nothing sounds worst than a canned presentation read from a piece of paper or your computer screen, I am sure that you have received many telemarketers who as you answer your phone ask to speak to Mr. or Mrs... then stumble on your name and launch into their canned speech. It's being read and sounds as if it's being read. It's inconsiderate, rude and downright foolish. It shows lack of preparation and concern for the person that you are calling for that employment.

You're currently unemployed and very eager to be a part of the working force again. You have scanned the want ads in the Internet and found the job which you think would best fit your qualities. You've submitted your resume. You have been called back and asked to go their office for a scheduled interview. Now what? Preparation is the key for a successful outcome of a job interview.

Here are some Dos and Don'ts when during that very important interview:

1. DON'T go to the interview without doing any background research about the company. It's not enough that you know the company's name and why they are well-known.

DO find out about the company's mission, vision and goals. Its history and advocacy even their target market, if there is such. It would also be useful to know their organizational chart so you could also make a quick mental plan on how to advance within the company. With enough research, you may answer with confidence and in specific the question: "Why did you choose to apply to our company?"

2. DON'T memorize your answers. Canned questions are a turn-off to interviewers and besides it does not give you enough space to ad lib. There is no script after all written for you and your interviewer to follow. Don't sound like you are in the question and answer portion of a beauty pageant.

Don't fall for the trap by immediately giving examples of your failures, dislikes or weaknesses.
